When I moved to France at the age of 18, I had to give up many things, often tied to my culture and traditions.Cuisine was perhaps the hardest thing to part with. Of course, it's all a matter of taste. But for me, Bulgarian cuisine is a journey through history, traditions, and unique flavors. Every dish tells a centuries-old story, rooted in Bulgarian culture and identity. Let’s dive together into this enchanting world where aromas and tastes will take you on an unforgettable journey.

The History and Flavors of Bulgarian Cuisine
Bulgarian cuisine, rich in flavors and traditions, draws its roots from the country’s ancient and varied history. It has been influenced by civilizations such as the Thracians, Slavs, and Byzantines. Over the centuries, it has evolved into a unique fusion of tastes and techniques. The products of the land, abundant in the fertile Danube plains, and the Balkan mountains, have always played a central role in Bulgarian gastronomy.
The Bulgarians have mastered the art of fermentation and food preservation, creating a variety of dishes. Cheeses, dairy products, and yogurts also hold an important place in Bulgarian cuisine, reflecting the significance of pastoralism in the country’s history. Ottoman influences have left their mark with dishes like Bulgarian moussaka and kebapcheta.The Traditional celebrationssuch as Christmas and Easter festivities, are often accompanied by special dishes.

Bulgaria is a relatively small country with seven administrative regions. But locals often speak of two regions: North and South, or East andWest.Personally, I come from Ruse, a city in the north by the Danube River. I often talk about North and South—it’s all a matter of perspective.

But let’s return to cuisine. It varies from one region to another, reflecting the climatic, cultural, and historical particularities of each region. Coastal regions stand out with their fresh fish and seafood dishes, while mountainous regions are known for hearty meat and root vegetable-based meals. Exploring the diverse regions of Bulgaria offers a journey through time, nature, and culture, unveiling the true diversity of this Balkan gem.
Bulgarian Salads
In September 2024, it will be 18 years since I moved to France. Yet, I still haven’t gotten used to the taste of tomatoes here. Or perhaps I never forgot the taste of Bulgarian tomatoes and all the summer vegetables. It’s something truly special in this region of the world, and you have to taste them to understand what I mean. That’s probably why I miss Bulgarian salads the most. They are a true delight, blending freshness and authentic flavors.
Among the must-tries is the "Shopska Salata,"a colorful and refreshing salad made with juicy tomatoes, crunchy cucumbers, green peppers, red onions, and crumbled feta. It's a festival of colors and textures that evokes the diversity of fresh produce from the region. Another Bulgarian culinary gem is the "Snezhanka," a yogurt-based salad with cucumbers, garlic, and fresh herbs. Its creamy texture and slightly tangy flavor make it the perfect side for many dishes. In Bulgaria, salads are not just a side dish; they are a celebration of local ingredients and a passion for healthy, delicious food.
Traditional Dishes
Bulgarian cuisine is a feast of authentic flavors, and its traditional dishes reveal the gourmet soul of the local culture. "Banitsa" is a star of breakfast—a delicious flaky pastry filled with cheese, eggs, and sometimes spinach, creating a perfect harmony of crispy and soft textures. For lunch or dinner, Bulgarian "Moussaka" stands out with its layers of potatoes, ground meat, and cream/egg sauce, baked for an explosion of flavors. "Kebabcheta" are small grilled meat skewers, usually made with minced lamb or beef, seasoned with local spices and grilled to perfection.
Lastly, "Gyuveches" are hearty stews prepared with a variety of vegetables, meat, and sometimes eggs, slow-cooked to intensify the aromas. Each of these dishes tells a unique culinary story, revealing the authenticity and richness of Bulgarian traditions. I’m writing this article at 7 p.m., and I must admit that just thinking about Bulgarian food is making me hungry.
Side Dishes
Side dishes in Bulgarian cuisine are a real treat! Let’s start with the famous fries topped with grated cheese. Simple yet incredibly effective. Then there's "lyutenitsa," a delicious pepper and tomato puree, perfect for dipping your bread or accompanying grilled meats. Don’t miss the breaded cheese, crispy on the outside and melting on the inside. And if you’re a fan of charcuterie, you’ll love the Bulgarian sausages and salami, full of flavors and spices. A feast to share!
